Butternut squash soup

When we had the chance to visit the restaurant of our local celebrity chef in Vancouver who went up against ‘iron chef’ –and won!, we had this amazing butternut squash soup as an appetizer. Since then, I’ve been keeping my eyes open for a great and simple butternut squash soup recipe to rival it. I’ve finally found it, and I’m excited to share it with you! The nutritional benefits of butternut squash ‘in a nutshell’ are: vitamin C, fiber, and carotene, all around protector and anti-cancer. This recipe is from the Pillsbury Doughboy Slow Cooker Recipes cookbook, since I rely on my crock pot quite frequently when I’m out most of the day–very rich and easy.

Creamy butternut squash soup

Yield: 6 servings
Prep time: 20 minutes (ready in 8 hours 50 minutes)

2 TBSP butter or margarine
1/2 cup chopped onion
1 (2 lb) butternut squash, peeled, cubed
2 cups water
1/2 tsp dried marjoram leaves
1/4 tsp coarsely ground pepper
1/8 tsp ground red pepper
4 chicken flavor buillon cubes
1 (8 oz) pkg cream cheese, cubed

  1. Melt margarine in large skillet. Add onion, cook until crisp-tender, stirring occasionally.
  2. In slow cooker, combine onion and all remaining ingredients except cream cheese. Mix well.
  3. Cover; cook on low for 6 - 8 hours.
  4. About 40 minutes before serving, place about 1/3 of mixture at a time into blender or food processor. Cover, blend on high speed until smooth. Return to slow cooker.
  5. Stir in cream cheese. Cover; cook on low for 25-30 minutes or until cheese is melted, stirring with whisk until smooth.

As I love the “Iron Chef” series and would dearly love to go to one of their restaurants, I can only just imagine what you would have had besides the butternut squash soup.As I’m unable to attend one I will just have to sit here looking at the soup bowl image on your site and dream about what I am missing.   3. Hi, starlily! I LOVE soups of all kinds. I’ve got a crockpot cabbage soup in my archives on my main blog. My husband doesn’t care for the smell, but he doesn’t stop me from making it. :) The squash soup sounds interesting, I’ll have to give it a try.

    Peter, I love the Iron Chef series too! but your comment made me realize I was guilty of some sloppy writing, so I’ve edited my post. The chef was Feeny, who challenged Iron Chef and won, so we are quite proud of him :) Thanks for keeping me honest!
