Crab quiche
I found and bookmarked this great list of best and worst seafood choices over at Oceans Alive. Fortunately, fresh crab is on the best choices list (at least, once a week) since most of the seafood we currently eat at my place is shellfish. Oceans Alive lists best and worst eco-choices, and also fish to avoid.
Crab meat is very low in fat, and is an excellent source of protein. It also contains quantities of iron, zinc, potassium, magnesium, calcium, phosphorous and essential fatty acids, as well as vitamins and minerals (especially B12). The bad news from all the nutritional charts I researched: it is high in sodium and cholesterol.
Last night, I amalgamated some recipes from my collection to make crab quiche. Usually we just like to dip our fresh crab in melted garlic butter, but this recipe was easy, and turned out light and tasty, first try.
Crust:
1 cup flour
1/2 tsp salt
1/4 cup olive oil
1/4 cup ice water
Mix together. Roll thin in flour with floured rolling pin, and place in quiche dish, tart dish, or deep dish 9″ pie plate.
Filling:
4 eggs
2 cups whipping cream
1 tsp salt
1/8 tsp cayenne pepper
2 TBSP minced green onions
1 TBSP Tabasco sauce
1 cup swiss cheese, grated
1/2 cup Parmesan cheese, grated
2 cups cooked crab, sliced
In bowl, whisk together eggs. Add cream, salt and pepper. Stir in crab, cheeses, green onions and Tabasco sauce. Pour into pie crust. Bake at 425F for 15 minutes, turn oven to 325F and bake for 35 more minutes. When knife inserted in center comes out clean, quiche is done. Let stand 10 minutes before serving. Enjoy!

Man you are a tease. I love crab but I am now severely allergic to all crustaceans so I have to give it a miss. I wish some of these recipes could offer alternatives - but then it wouldn’t be crab quiche would it.

Imitation crab (pollock) would work. You could leave out the crab to have simply swiss cheese quiche, or use fried mushrooms instead of crab. Some people use bacon instead of crab, but I won’t tempt you with that one!

Hi! I’ve been watching the Deadliest Catch television series that documents the events aboard fishing boats in the Bering Sea during the Alaskan king crab and Opilio crab fishing seasons. I love to eat crab but I didn’t realise what danger some people go through to put it on our plates. The crabs sure would taste great cooked using your recipe though!
