Turkey and stuffing soup

For the past few days I’ve been coping with a nasty little virus. Since I prefer not to take cold medicine, I’ve been trying to remember to drink a lot of fluids. I’ve stocked up on orange juice and different types of my favorite teas. When I’m feeling under the weather, comfort foods are definitely on the menu.

I made a big pot of soup with the leftover turkey from Thanksgiving dinner, and it has been a nice substitute for chicken noodle soup. Here’s my recipe for leftover turkey and stuffing soup.

Ingredients:
1 onion
2 carrots
2 celery stalks
1 TBSP olive oil
6 cups chicken stock
2 cups turkey, chopped
1 cup peas
salt & pepper to taste
2 fresh basil leaves (or your preferred soup seasoning)
leftover stuffing (optional, but yummy)

  1. Chop onion, carrots & celery and cook in oil in large pot.
  2. Add stock. Bring to boil.
  3. Add turkey, peas and seasonings, and simmer until veggies are soft (about 10 minutes).
  4. Re heat stuffing in oven or microwave.
  5. To serve, place one heaping spoon of stuffing in center of bowl, and pour soup around it.

  1. I’m the same way - not big on taking medication. I do a soup similar to your’s but with chicken (of course I realize you’re coming out of Thxgiving). It’s a good cure!
