Tomato and mozza salad

The Mediterranean diet, with its abundance of fresh fruit, vegetables, whole grains, seeds, nuts, seafood and olive oil, is regarded as healthy. Here’s a simple salad to try.

Ingredients:

1 ball fresh mozzarella
1 tbsp wine vinegar
2.5 tbsp olive oil
Salt & pepper
4 tomatoes, sliced
Handful fresh basil leaves

  1. Drain the mozzarella and cut into even slices.
  2. Mix together vinegar and olive oil. Season with salt and pepper.
  3. Cut the basil leaves into thin strips and add to dressing (reserve a few for garnish).
  4. Interlace tomato and mozza slices on serving plate, drizzle dressing, then scatter reserved basil over top.

    Philly Mediterranean Dip

    1 pkg. (8 oz.) Philadelphia Neufchatel Cheese, 1/3 Less Fat than Cream Cheese, softened
    1/2 cup chopped seedless cucumbers
    1 plum tomato, chopped
    2 Tbsp. finely chopped red onions
    2 Tbsp. KRAFT Greek Vinaigrette Dressing

    SPREAD Neufchatel cheese onto bottom of 9-inch pie plate.
    MIX remaining ingredients; spoon over Neufchatel cheese.
    SERVE with WHEAT THINS Snack Crackers or assorted cut-up fresh vegetables.
