- 1 chopped onion
- 1 small cabbage (1 lb) shredded
- 1 can (28 oz) diced tomatoes, undrained
- 1 TBSP brown sugar
- 1 TBSP cider vinegar
- Salt & pepper to taste
- Hot cooked rice
Cook beef and onion over medium heat until meat is no longer pink. Drain. Stir in cabbage. Cover and cook for 5 minutes or until cabbage is crisp-tender.
Stir in tomatoes, brown sugar, vinegar, salt and pepper. Cook 10 minutes longer, stirring occasionally. Serve over rice.
This is another recipe I adapted from Taste of Home Market Fresh Cookbook. Super easy & comfort food! I served it over mashed potatoes, with salad.
